Salmon Croquette Burger
How's everyone's weekend going? It's been pretty busy around these parts, so I'm sorry for my lack of posts. I've got some big things coming up this week - yesterday I was at the Muhammad Ali Center for the Mayor's International Gala. I competed against 7 other teams in an international culinary competition. My group drew Ecuador and we placed 2nd - only by a 1 point loss! It was an awesome experience, and the fact that many people came up to me and had multiple tastings of our dish, as well as saying it was the best they'd had all night. That was prize enough! And I couldn't have lost to anybody better - the 1st place team included my usual lab partner in class, so I was so happy for her!
And I've also been chosen as a participant to enter into the San Pellegrino Almost Famous Chef competition. I'm most excited about this because the ultimate winner (I'd have to get through 3 rounds: Locally against the Sullivan Lexington campus, Regionally in Chicago against all the Northwest Region champs, and Nationally in Napa Valley against all the regional winners) gets a $10,000 cash prize, a 1 year externship at a celebrity chef's restaurant, and a media tour with San Pellegrino. A chance. of. a. lifetime. So I'm crossing my fingers that I at least place out of the local competition and get a trip to Chicago, but it would be hella neat if I got to go to Napa Valley too, right?!
Anyway...
A little while back, I went to lunch at the Marketplace Restaurant with a couple of old co-workers. I had the most amazing salmon croquette sandwich and have been craving it ever since. So I decided to whip up my own version at home!
Ingredients:
1/4 cup onion, small diced
1 cup potatoes, cooked and mashed
1/4 cup scallions, chopped
1 tablespoon Old Bay seasoning
1 tablespoon lemon pepper seasoning
2 tablespoons unsalted butter
3 tablespoons flour
1 cup milk
1 lb. salmon, poached and flaked
1 tablespoon fresh dill, chopped
salt and pepper, to taste
juice from 1 lemon
flour, for breading
egg wash, for breading
breadcrumbs, for breading
vegetable oil, for frying
Lettuce, Bread, Mayo, etc. for sandwich compilation
Heat a large saute pan under medium high heat and melt butter. Add onions and cook until translucent.
Add the flour to make a roux.
Add milk and whisk constantly until no lumps remain. Cook until a slightly thick bechamel is formed, about 5 minutes.
Remove from heat and transfer to a medium mixing bowl. Add the salmon, dill, salt, pepper, lemon juice, scallions, mashed potatoes, Old Bay seasoning, and lemon pepper seasoning.
Place mixture in the fridge to firm up and chill, about 10-15 minutes.
Set up a 3 compartment breading station (one pan flour, one pan egg wash, one pan breadcrumbs).
Portion the mixture into 8 oz. patties (or desired size). Dredge each patty in flour, then egg wash, then finally breadcrumbs.
Heat a deep fryer or oil in a heavy-bottomed pan to about 375F. Fry each patty for about 2-3 minutes, or until golden brown. Drain each patty on a paper towel-lined plate and season with salt, if needed.
Assemble the salmon burger to suit your tastes. We put ours between two pieces of white bread, and topped with some green leaf lettuce and mayonnaise. Pretty darn easy, tasty, quick!

Fried Catfish Fajita Tacos w/ Spicy Tartar Sauce
It's going to be a busy week, I can already tell! But I'm trying to think positively, and fit in as much sleep as I can =)
I had a discussion with a friend a couple weeks ago about the proper way to cook catfish. He said that he tried to be "healthy" and saute it with some vegetables and said it tasted awful. I sort of looked at him in a puzzled look and began to laugh. I then went on to tell him that it was common knowledge that the only way you can cook catfish is to fry it! Am I right?!
So that got me in the mood for some catfish. I've been on a fish taco kick, so I figured it would be a good addition to tacos, as well! Throw on some spicy homemade tartar sauce and you've got yourself a tasty lunch!
Ingredients:
Catfish:
2 catfish fillets, cut into 4 strips
1 tablespoon paprika
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon oregano
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 cup flour
2 eggs, whisked
1-2 tablespoons cold water
1 cup cornmeal
oil, for frying
salt and pepper, to taste
1 green bell pepper, julienned
1 red bell pepper, julienned
1 small onion, julienned
1 tablespoon olive oil
Spicy Tartar Sauce:
1 cup mayonaisse
2 pickles slices - about 1/4 cup (I used sweet dill sandwich slices, but feel free to use cornichons or butter, or whatever suits your fancy!), minced
juice from 1/2 lemon
salt and pepper, to taste
Worcestershire sauce, to taste
Tabasco sauce, to taste (obviously you want a lot if you want it to be spicy!)
Tortillas, warmed
Set up a 3 compartment breading station - one pan for flour, one pan for egg wash, and one pan for cornmeal.
In the first pan, combine the paprika, black pepper, salt, oregano, sugar, garlic powder, cayenne, and flour.
In the next pan, combine the eggs and the water. Make sure it is fairly well whisked together.
And in the third pan, place your cornmeal.
Heat enough oil in a heavy-bottomed pan to come up about an inch. Heat under medium high heat until temperature reaches about 375F.
Fry catfish until white throughout and exterior is golden brown, about 3-5 minutes, flipping once. Place on paper towel-lined plate and season with salt and pepper.
In a large saute pan, heat up olive oil under medium high heat. Add bell peppers and onions. Saute until onions are translucent and tender, but still somewhat crisp, about 5 minutes. Season with salt and pepper, to taste.
To make tartar sauce, combine mayo, pickles, lemon juice, salt, pepper, Worcestershire sauce, and Tabasco sauce in a medium bowl. The more Tabasco the better, in my opinion!
To make your tacos, place one piece of fried catfish on top of a warmed tortilla. Top with onion and bell pepper mixture and desired amount of tartar sauce.
For some reason, I've been loving making fish tacos for lunch. It's so fast and easy - and pretty darn tasty! How do you prepare your catfish?

Buffalo Chicken Breast Sandwiches
One of the first things we ended up making in class were Buffalo Chicken Sandwiches. I guess they want to start us off with something easy before working our way up to something more skillful.
I didn't mind because buffalo chicken sandwiches are actually one of my favorites.
So the first installment of "What to do with your broken down chicken" is making use of the chicken breasts. A simple sandwich that is as easy to put together as it is to eat!
Ingredients:
2 chicken breasts, skin removed
1 tablespoon olive oil
lettuce
1/4 cup of your favorite hot sauce (I used Frank's Wing Sauce - it's thicker and coats the chicken perfectly)
bacon
2 whole wheat buns
salt and pepper, to taste
Heat a large skillet under medium high heat and add oil. Season chicken breasts with salt and pepper on both sides. When oil is shimmering, add chicken to pan.
When the bottom side is a nice golden brown (about 4-6 minutes), flip the breast over.
Finish cooking the chicken until white throughout, an additional 5-7 minutes. Transfer chicken breasts to a plate and let rest.
Assemble your sandwiches by placing lettuce on the bottom half of the bun.
Then you'll want to place your hot sauce in a medium stainless steel bowl. Add chicken breasts, one at a time, swirling them around to coat well with sauce - kind of like you're saucin' some wings, ya know?
Then place your sauced chicken breast on top of the lettuce.
Then add a little bacon if you're feelin' frisky.
And close that sucker up with the top bun, and voila! A buffalo chicken sandwich that'll be gone in less time than it took to put together!
Serve with fries if you'd like (I got to practice my battonet knife cuts in making them so I was all about it - speaking of, would you guys like some how-to knife cut posts?)

Zucchini Frittata
Good morning!
I woke up with a killer cramp in my calf this morning, so I'm slowly limping around the house. As time passes, it seems to be getting better... but it doesn't look like I'll be getting my run in today. I figure I better let it rest up and I'll get back at it Saturday.
I'm pretty stoked today because I get to take a little roadtrip to Danville, KY to meet up with a few other Kentucky Food Bloggers. We're doing a tasting of a few restaurants tonight and I'm really excited to actually meet these awesome bloggers in person. I'll definitely post pictures and a review of the experience next week!
I made this frittata when we had tons of zucchini from our CSA. It was quick, easy, and my only complaint... I used too big of a pan, so it looks rather thin (and more like an omelette) than an actual frittata. Oh well, it still tasted mighty good!
Ingredients:
1 tablespoon olive oil
2 zucchini, chopped
salt and pepper, to taste
6 eggs
1 cup cheddar cheese, shredded
1/4 cup milk
In a medium skillet under medium high heat, add about 1 & 1/2 teaspoons olive oil. Add zucchini and saute until starting to brown, about 5-7 minutes. Season with salt and pepper. Remove zucchini and set aside.
In a medium bowl, beat the eggs and milk together. Season with salt and pepper. Heat a non-stick skillet under medium low heat and add remaining 1 & 1/2 teaspoons of olive oil. Coat pan with oil.
Pour the egg mixture into the pan and let cook until the egg starts to solidify, about 2-3 minutes. Spread the zucchini over top of the eggs and top with cheddar cheese. Cook for an additional 3 to 5 minutes, or until egg is cooked through and cheese is melted.
Slice and serve right away.
This was simple, delicious, and easy. You could have it for breakfast, lunch, or dinner. It's perfect for any time of day! Feel free to swap out the ingredients for what you have, and add whatever you like! Frittatas are versatile like that =)

Stewed Tomatoes & Okra
Okra is one of those things that I don't cook enough of. Actually... this would be the first dish I ever used okra in. And after eating it for lunch for the past two days, I think I can pat myself on the back because it was pretty darn good! And it definitely won't be the last time I make it either!
What's your favorite way to use okra?
Ingredients:
15 oz. can of fire roasted diced tomatoes
2 cups sliced okra
salt and pepper, to taste
2 cups cooked rice
Place the okra in a medium-sized pot and add enough water to cover the okra. Add diced tomatoes and bring mixture to a boil. Lower heat to a simmer and cook for about 30 minutes, or until okra is softened and the majority of liquid is gone.
I've noticed that different people like okra at different consistencies. I'm not a fan of crunchy okra, so I cooked my okra until it took on the texture it has in gumbo - soft, but not gummy.
When the liquid is almost gone, add in the rice and mix well. Season with salt and pepper. Serve hot.
This was really easy and tasty! I mean, 4 ingredients, how can you beat that?! This would make a great side, or even a delicious vegetarian lunch or dinner.
I know I'm my usual late self, but like I said last week - sporting events prevail!

Blueberry & Avocado Spinach Salad
Happy Monday guys! Anybody do anything exciting?
Again, we were pretty lazy. Andy had to go into work yesterday night for some end of the month reports, so I sat around the house catching up on some Netflix action.
It's also August! Boy has this year flown by!
I thought I'd start the week with something light. I usually take my lunch to work 99.9% of the time, and this is just a glimpse of the sort of thing I take with me!
Ingredients:
1 Avocado, cubed
1/4 cup cherry or grape tomatoes
a few slices of ham, chopped
1/4 cup blueberries
1 cup spinach
juice from 1 lime
I'm one of those weird people that prefers their salad undressed most of the time. And plus, the avocado is creamy enough that it adds a faux dressing feel.
Combine avocado, tomatoes, ham, blueberries, and spinach in a large bowl. Toss until mixed well.
Squeeze lime juice over salad and toss again.
Dig in!
Quick and easy lunch any day of the week!
