Korean Japchae
I know what you're thinking... Jap-what? Japchae. Kind of like a Korean version of Filipino pancit (which I'm still partial to). Andy described it as a taste he's never experienced before... good or bad, I took it as a compliment.
On a side note, another late post and I apologize. Middle of the weeks have been rough. Too many tests crammed in there, but I promise, I'm still lighting up that kitchen! Just a couple more weeks and spring break will be here and I'll be Savannah, Georgia bound... any recommendations of things to do down there for anybody that's been?
Ingredients:
1 rib-eye steak, thinly sliced and most fat removed
1 bunch spinach
2 carrots, julienned
5 shiitake mushrooms, stems removed and thinly sliced
3 garlic cloves, minced
1 onion, sliced
handful of green onions, thinly sliced
3 tablespoons soy sauce, divided
sesame oil
1 tablespoon sugar, divided
1 package vermicelli rice noodles
1/8 cup seasoned rice vinegar
Bring a pot of water to a boil and add rice noodles. Cook for about 3-5 minutes, then drain and place in large bowl.
Add 1 tablespoon of soy sauce and 1 teaspoon of sesame oil. Mix well.
Wash the spinach and blanch for about 1-2 minutes. Drain well and mix in with noodles.
In a large skillet under medium high heat, add about 1/2 tablespoon of sesame oil and stir-fry the carrots, onions, and garlic. Add that mixture to the noodles.
Add beef and mushrooms to same skillet and cook until beef is done. Add 1 tablespoon soy sauce, and 1/2 tablespoon sugar. Stir in the green onions and add mixture to noodles.
Finally, add in remaining soy sauce and sugar, 2 teaspoons sesame oil, and rice vinegar. Mix well and serve!
Like I said, I'm still partial to the Filipino pancit after eating this dish. It was tasty.... different... but tasty nonetheless. Enjoy!

ReplyDeleteI was wondering how it turned out with Pancit noodles. Did you use bihon? I've always have Japchae with potato noodles. I've never made it but always wanted to.
ReplyDeleteSpeaking of Savannah, if your looking for a good restaurant, there's always The Lady and Sons. Make sure you get there at 10:30 to get your name on the list. The Shrimp Company has an awesome salad. As far as things to do, we always just walked along the river.
Lady and Son's sucks, take it from a local. I'm taking my little sister to Mrs. Wilkes!!
ReplyDeleteOh Lady and Sons is over rated - if you do go order off the menu and don't bother with the buffet! I lived in Savannah for a couple years while my now husband, then fiance, got his MFA. It's been three years since we were there, but I'll tell you what was good three years ago.
ReplyDeleteVisit River Street in the afternoon and check out all the little shops and galleries. Do not where high heels the whole place is cobblestone and makes spike shoes trouble, especially after a couple drinks. Have dinner at ... I can't think of any restaurant I loved on River Street.

If you are looking for a cheap meal with a lot of attitude many of the Savannah College of Art and Design students eat at Vinnie Van Gogo's where you can get a huge slice of pizza for $3 and sit out on the plaza with the heaters and start your evening or hang out for lunch www.vinnievangogos.com

Sweet Potatoes
A fabulous little restaurant that is no where near any fun touristy stuff, but it's worth the drive. Get the Catfish BLT. Sooo good! Same people own Toucan Cafe which I've never been to.

Hostel in the Forest

Safety
One little side note, stuff gets stolen in Savannah. Don't leave anything valuable visable in a car and don't carry anything you wouldn't be willing to lose. Purses often get poached. It was something I had to get used to, after having living in small town Iowa.
